To your point. We encountered the same problem. We built Docker images for "less mature packages"and used docker-compose to build a DAG Docker image repo. Usually there is a node Docker image to satisfy a need. We also had a build a dictionary, simple YAML file, so that you could query (use pandas) to find the node you want. There are lots of articles and code around to shrink the image. You are going to need to shrink if using docker-compose.
